  • © 2019 IISE Annual Conference and Expo 2019. All rights reserved.A commercial chain company owning self-service stores is expanding its market by introducing a new line of fresh products. These products have an expiration period of 24 hours. Today, some of these stores have food preparation modules, in here these products are made. Nowadays, production is limited to the stores with modules. There only exists 1,100 out of the 17,400 stores in Mexico with this adaptation. The purpose is to design a standardized production system for stores with modules to be considered ¿mother stores.¿ The objective is for one operator to produce 320 products during the night to be distributed to stores without modules. To design a replicable system, it´s necessary to carry out tests; involving investigations of production and distribution capabilities of operators, simulations of administrative issues of reconciliations for the handling of materials; in order to develop a mapping of the standardized processes involved in the mother store system. A simulation was made but the results were the opposite of the expected. Research was made to reduce time in bottleneck activities. This project is important for this company because its market capacity will increase with a new standardized product line which must be replicated for its stores.
