© 2021 by Nova Science Publishers, Inc.Milk is an animal product consumed for human nutrition since the beginning of humankind. Depending on the geographical area and environmental characteristics, humans have used milk from different species for direct consumption or processed to increase shelf life. Milk from cow, goat, sheep, buffalo, mare, and camel is used to be drunk or produce cheeses, fermented milk, butter and other derivatives. The nutritional value of milk and dairy products is well-known and valued with most recent studies highlighting their health benefits associated with antihypertensive, immunomodulatory, antioxidant, and antibacterial activities linked to peptides obtained during dairy products¿ manufacture.
