All Rights Reserved.The main objective of this paper is to show the role played by theselection and creation of new wheatvarieties in the process of constitutionand territorial expansion of the USwheat production model from the17th century until the end of the19th century. The article suggeststhat these biological innovationsallowed to increase the productionand territorial extension of the wheat,they were key in the development ofa commercial production on a largescale and contributed key empiricaland methodological data for theconstitution and institutionalization ofa scientific agriculture at the beginningof the 20th century. These innovationswere the result of very different effortsand experiences, from those personal,local or community accumulatedover generations, to those basedon the scientific, mathematical andmethodological literature of the time
