These two cereals provide most of the calories and proteins consumed worldwide. Among the array of products produced from corn and wheat are tortillas and related products. These processing industries evolved from ancient processes developed in Mesoamerica. The tortilla industry has advanced especially during the past 20 years, so today we can find commercial tortilla products practically in every continent around the globe. The mechanization of the tortilla industry has made it possible to produce a wide array of high-quality products with great processing efficiency. Nowadays, the consumer demands new foods with better nutritional attributes and health-promoting properties, and processors have to innovate in order to keep or expand their markets.
