    	© 2021 by Nova Science Publishers, Inc.Lentils (Lens culinaris) are an ancient crop that represents an important part of various civilizations¿ diets throughout history. Although for lost time, it is now becoming increasingly important around the world for its great benefits and properties. This chapter aims to describe lentils as a superfood due to its components and the beneficial activities it has, such as antidiabetic, anticancer, antioxidant, antimicrobial, among others.
