Domínguez-Uscanga, Astrid

Overview

Full-time professor in the Department of Bioengineering at Tecnológico de Monterrey, Querétaro campus. She holds a PhD in Food Science from the Autonomous University of Querétaro. Her scientific career has focused on the study of bioactive compounds, nutrition and metabolic health, as well as the development of biotechnological strategies to improve the functional properties of food. She has completed research stays and projects at national and international institutions, including Tecnológico de Monterrey and the University of Illinois Urbana-Champaign, where she participated in projects related to the efficient delivery of nutrients and functional compounds. In the field of education, she teaches courses such as food biotechnology, biotechnological product development, biomimetics and sustainability, innovation in food development, and fundamentals of biological systems.
