Doctor Aurea Ramírez Jiménez is a research professor whose line of investigation focuses on nutrigenomics studies of functional foods and the re-valorization of agro-industrial residues, evaluating their bioactivity in in vivo and clinical models. She has initiated a research line focused on the study of Apolipoprotein CIII as a marker for dyslipidemia and genetic variability associated with the risk of cardiovascular diseases. She holds a Ph.D. in Food Sciences, completed a postdoctoral stay in the Biotechnology Department at CICATA-IPN Qro, focusing on the application of emerging technologies for the production of functional foods with minimal impact on bioactive compounds. Additionally, she completed another postdoctoral stay at the FEMSA Biotechnology Center on the Monterrey Campus, specializing in Nutrigenomics of Mexican foods and agro-industrial residues for the generation of high phytochemical and functional value foods. She has received national awards such as the Alejandrina Research Award in 2020, has authored over 24 publications in JCR journals, has supervised undergraduate and 2 master's students, and currently supervises 4 doctoral students enrolled in the biotechnology postgraduate program. She is a member of the international AlphaNutra network of functional foods and nutraceuticals, the Mexican Association of Food Science, OWSD (Organization for Women in Science for the Developing World), and is part of the Good Food Institute's network of scientists.
