Antunes-Ricardo, Marilena

Biotechnology Ph.D., Marilena Antunes Ricardo has been a researcher at Tecnológico de Monterrey for more than 10 years and currently belongs to the Healthy Food Unit at the Institute for Research on Obesity (IOR) of Tecnológico de Monterrey. She is a member of the National System of Researchers (SNI) of CONAHCYT at level 2. She has extensive experience in the collection, purification, analysis, and characterization of bioactive molecules present in various plant matrices and by-products of the agri-food industry, as well as the development and validation of biological platforms, using tissue culture or in vivo models, for the evaluation of their potential effects. Her main lines of research are: 1. Immunomodulatory and anti-inflammatory mechanisms of action of food biomolecules and their effect on chronic degenerative diseases. 2. Exploitation of agro-industrial by-products for their incorporation as functional ingredients in food and/or cosmetics through scalable strategies at an industrial level. 3.
