Escobedo-Avellaneda, Zamantha Judith
Overview
The Doctor in Engineering Sciences, Zamantha Escobedo-Avellaneda, is a member of the National System of Researchers (SNI) as Level 2 and Research Professor at ITESM, Campus Monterrey. She belongs to the NutriOmics and Emerging Technologies Research group. She is the head of the Emerging Technologies Laboratory at Centro de Biotecnologia FEMSA at ITESM. In 2018 she cofounded the Alpura Research Chair. Her research lines focus on process development assisted or based on nonthermal technologies (high hydrostatic pressure, pulsed electric field, and ultrasound); in the application of nonthermal technologies for food preservation, in the preservation/extraction/synthesis of bioactive compounds from vegetable matrices; in vanilla curing and improvement/design of extraction processes for vanilla compounds; in the use of waste from the agri-food industry to obtain high-value byproducts, and in food drying. She has published 27 research papers in Q1 and Q2 Journals in the area of Food Science and Technology and 10 book chapters. She has presented 37 works in national and international conferences and she was part of the organizing committee of the 2019 IFT-EFFoST International Nonthermal Processing Workshop and Short Courses held at the ITESM in 2019. She has participated in eight national and international research stays, including twice in the Marie Curie Actions-International Research Staff Exchange Program. She is a member of the Institute of Food Technologists (IFT) and in 2012, she was the Latin American Student Representative of the Nonthermal Processing Division of the IFT. He currently participates as Guest Editor of the special issue "Techniques Applied for Food Analysis" of the open access journal "Molecules" (ISSN 1420-3049, IF 4.412) and is Review Editor of "Nutrition and Food Science Technology (specialty section of Frontiers in Nutrition) " (ISSN 2296-861X, IF 6.576)".
