The Doctor in Engineering Sciences, Zamantha Escobedo-Avellaneda, is a member of the National System of Researchers (SNI) as Level 2 and Research Professor at Tecnologico de Monterrey, Campus Monterrey. She belongs to the Emerging Technologies and Nutraceuticals Research group. She is the head of the Emerging Technologies Laboratory at ITESM and co-founder of the Alpura Research Chair. Her research lines focus on process development assisted or based on nonthermal technologies (mainly high hydrostatic pressure and pulsed electric field); in the application of nonthermal technologies for food preservation, and in the preservation and extraction of bioactive compounds from agri-food by-products. She has published 41 research papers and book chapters in the area of Food Science and Technology and presented 43 works in national and international conferences. She was part of the organizing committee of the 2019 IFT-EFFoST International Nonthermal Processing Workshop and Short Courses held at ITESM and she was part of the International Scientific Committee of the 37th EFFoST International Conference 2023 (Valencia, Spain). She has participated in eight national and international research stays, including twice in the Marie Curie Actions-International Research Staff Exchange Program. In 2012, she was the Student Representative in Latin America of the Nonthermal Processing Division of the IFT. She has directed six Bachelor's theses, and directed/codirected five Master's theses from ITESM. She codirected two Master's theses and two Bachelor's theses from the UACH and one Master's thesis from the IPN. She is currently directing four postgraduate theses from ITESM.
